Chef Clément Hernandez (Workshop) explains the history of soupe à l’oignon to K. Tan (iTAN): an easy, inexpensive yet tasteful dish that was originally invented in Paris (Les Halles), for the overnight workers who needed to eat something at the early hours of morning.
